Low Carb Chocolate Chip Cookies

These are the best low-carb, THM-friendly chocolate chip cookies from the kitchen of my beautiful mother ;)
Servings: 3 dozen
Course: Dessert (THM S)

Ingredients
  

Dry:
  • 2 c. almond flour opt: sub 1 c. baking blend
  • ½ tsp. baking soda
  • ½ t. gluccie or xantham gum
  • 1/3 c. Lily’s chocolate chips
Wet:
  • ½ c. butter softened
  • 2 eggs
  • 1 T. vanilla
  • 1/3 c. sweetener

Method
 

  1. Mix the dry ingredients together (including the chocolate chips)
  2. Cream the wet ingredients together
  3. Stir the dry into the wet
  4. Drop by spoonfuls on cookie sheet
  5. Flatten with palm of hand
  6. Bake at 350 for 5 minutes, then turn the pan around for another 4
  7. Let them rest on the baking sheet a few min.
  8. Best eaten right after baking or from the freezer
  9. Makes 3 dozen
