A few years after I started THM, I wanted an S version (low carb) of granola to put on yogurt or to have with almond milk for an S breakfast. I came up with this quick and easy granola recipe. Make it your own! You can add more cinnamon or sweetener if you want, freeze dried strawberries and blueberries, or even omit the cocoa (but if you’re a chocoholic like me, you’ll want to leave it in 🙂

Easy Chocolate Granola (THM S, Keto, Low Carb)

This is a quick, easy, and crunchy granola that will satisfy your cereal craving & your sweet tooth. It's perfect for a quick chocolate fix in the afternoon or as a topping for your yogurt 🙂

Servings 10 -12 servings


  • Dry:
  • 2 T. gentle sweet
  • 2 T. cocoa
  • 1 c. golden flaxseed meal
  • 1 c. unsweetened coconut
  • 2 c. chopped or sliced nuts any nuts you like
  • Cinnamon to taste
  • Wet:
  • 1/2 c. water
  • 2 T. vanilla
  • 1/2 c. coconut oil microwave 40- 50 sec to liquify


  • Preheat oven to 300
  • Combine water, sweetener, vanilla and coconut oil
  • Toss with dry ingredients on a cookie sheet
  • Bake for 45 minutes, stirring every 15 minutes

Enjoy on top of yogurt, shakes, ice cream, in a parfait, with some almond milk or on it's own as a quick S snack
