Fall is here and it’s not just pumpkin season (my favorite) but it’s chili and soup season as well. I’ve been meaning to post my chili recipe for awhile now. This recipe goes together quickly and is one of those perfect healthy, hearty & tasty comfort foods. This recipe actually place 1st place at our church chili cookoff 2 years in a row 😉

Ingredients
  

  • 1 lb ground turkey
  • 3 cans beans white, kidney, & black are my faves
  • 1 can fat free refried beans
  • 2 cans diced tomatoes- italian flavored with basil garlic, & oregano
  • 2 T. chili powder you can just use 1 if you don't like too spicy
  • 2 tsp. garlic salt
  • 1 T. cumin
  • 1 c. salsa with cilantro
  • 2 cans water
  • 1 can corn rinsed
  • 1 c. seasoning mix or dice 1 c. onions and peppers
  • 1 c. diced celery
  • 1 c. diced carrots

Instructions
 

  • Cook the ground turkey
  • Sautee the onions ,peppers, celery & carrots
  • Put the rest of the ingredients in a stock pot
  • Add in the ground turkey and veggies once softened
  • Cook all ingredients on medium high until it boils
  • Reduce heat to low and simmer for an hour

You can make this in an instant pot- brown the meat first, put all the ingredients in, press the chili button and it will be done in less than an hour 🙂
